Apple Fig Smoothie

It’s fig season and I could not be more delighted!  In addition to being simply divine figs are loaded with healthy nutrients including B6 vitamins and minerals such as copper, potassium and manganese. Figs are also an excellent source of dietary fiber making them a fabulous choice in weight management.

Personally I just love the taste and enjoy their brief season every year. This simple smoothie makes a great breakfast or a pick me up later in the day

Apple Fig Smoothie

Ingredients

  • 1 small apple
  • 3-4 figs depending on size
  • 1/4 cup raw cashews or 2 generous tbsp raw cashew butter
  • 16 oz almond milk

Instructions

  • Place all ingredients in a blender.
  • Blend until smooth.
  • Enjoy!

  1. Hi valerie; as a kid one of my favorite cookies was the fig nutan. I’m not sure how good this will taste, but I’m interested. Its almost enough to make me want to buy a blender. 🙂 I do agree the recipe is simple, and I like the fact that it makes enough for two so you can share. I also notice that it includes nuts and almond milk so it should also be high in protein. don’t know how the people at my gastric surgery support group will feel about it. thanks for sharing, max

    • You are most welcome Max! I loved fig nutons growing up and my girls still love them today. You’ve just inspired me to come up with a home made recipe for those! I do hope you’ll be able to enjoy this smoothie and hope your support group will approve 🙂 Best of luck with your recovery. I do think a blender is a fabulous investment 🙂
