Black Kale and Endive Salad

BlackKaleEndiveSaladBlack Kale has to be one of my favorite vegetables!  It is a member of the cabbage family and brimming with vitamin C, folic acid, calcium, and potassium. As most dark leafy greens, kale is rich in  antioxidants and chlorophyl, which help to build a strong immune system  by keeping your blood ph on the alkaline side. It is one of these vegetables that is highly susceptible to pesticides so I only buy organic kale.

I love the sweet after taste of black kale, and will sometimes nibble on the stems, which are particularly sweet.  I  enjoy it just as much in salads such as this one, or sautéed with a little garlic alongside a piece of grilled fish.h antioxidants and chlorophyl to keep your blood ph on the alkaline side.

This is a simple and delicious salad you can enjoy as is, or with a piece of grilled fish or grilled wild Alaskan salmon, if you are looking for a complete meal.  Enjoy!

Serves 4

Ingredients:

Making the salad:

Wash and pat dry black kale.

Tear into a salad bowl.  Slice endives and avocado and toss into bowl.  Add sprouts and sprinkle with Chia seeds.

Drizzle with citrus dill dressing and toss.

Optional: add strips of grilled chicken breast, grilled shrimp or grilled wild Alaskan salmon for added protein.

  1. YUM! That sounds delicious. We love Kale in our house. My 4-year-old and 2-year-old can eat bunches of it at a time… raw, roasted, whatever.
