Coconut Cherry Bars

CoconutCherryBars2If you’re looking for a treat that is as delicious as it is good for you, then look no further. These scrumptious coconut cherry bars are filled with fruits and nuts rich in antioxidants and vitamins that will give you clean, healthy energy. My daughters love these as a snack, I love to keep one in my purse for a quick fix whenever I need one, and my hubby loves them before his 50 mile bike rides. I’m sure you will love them too!


* Replace with dark chocolate chips or chunks if desired

To make the bars:

Place all the ingredients in bowl of food processor. Begin by pulsing ingredients until coarse chunks. Continue blending until a sticky paste is formed.

Place the paste on a piece of parchment paper and spread into a 1/4 thick rectangle.

Wrap in paper and freeze until firm.

Cut into bars or squares of your liking and enjoy!
