Curried Chicken and Strawberry Salad



The subtle spice of the curry is beautifully complimented by the sweet tartness of the strawberries in this delicious salad.  Sprinkle with a handful of slivered almonds or raw chia seeds for a scrumptious experience!

Curried Chicken and Strawberry Salad

Bite into summer with this delicious salad. A subtle hint of curry brings out the

Serves: 4
For the dressing: (yields about 1 cup dressing)
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh squeeze orange juice
  • 3 tbsp apple cider vinegar
  • ½ cup organic virgin olive oil
For the Salad
  • 2 chicken breasts, cut into strips -- I use pasture raised
2 tsp curry
  • 1 tbsp olive oil
  • 6 oz baby power greens (kale, spinach and red chard)
  • 4 endives -sliced
  • 1 cup sliced fresh organic strawberries
slivered almonds, pepitas or chia seeds for sprinkling
Making the dressing:
  1. Place all ingredients in a glass jar and shake until well blended.
  2. For a creamier dressing, use a small blender such as a Magic bullet or Nutribullet and blend for 10 seconds.
Preparing the chicken
  1. Heat a medium skillet.  Add curry and heat to release flavor.
Add olive oil.
  2. When oil is hot add chicken.  Brown on all sides, infusing with the curry.  Reduce heat and cook until tender.
Assembling the salad:
  1. In a  salad bowl, combine baby greens, curried chicken, sliced endives and sliced strawberries.  Drizzle with dressing and toss until combined.
  2. Sprinkle with sliced almonds, pepitas or chia seeds if desired.
  3. Serve and enjoy!
