Garlic and Basil Cod


Cod is one of my favorite fish due to it’s delicate flavor and wonderful texture.  This is a  delicious dish on a warm summer evening, accompanied with sautéed spinach, kale or zucchini and a simple green salad.

Serves 4

Preparation: 10 minutes

Cooking: 15 minutes


  • 4 steak fresh cod
  • 10 cloves garlic. minced
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 extra virgin olive oil
  • dash paprika
  • Fresh ground salt and pepper to taste
  • optional: juice of 1 lemon
  • 4 sheets aluminum foil

Preparing the fish:

Preheat barbeque grill or oven to 350

Place one cod steak on each piece of foil.

Drizzle a nice filet of olive oil on each steak.

Divide garlic and basil into 4 portions. Sprinkle onto each steak/

Sprinkle a dash of paprika on each steak.

If you so desire, add a squeeze of fresh lemon juice.

Salt and pepper to taste.

Fold foil over cod length wise then fold in sides.

Place in oven or barbeque and bake for 15 minutes or until fish is fully cooked.  Do not overcook or fish will get a little rubbery.

Be careful when opening the foil as the fish will be very hot and steam will escape.  The foil seals in all the flavors and juices for a delicious meal.
