If you’ve never had fresh green beans with garlic and parsley you are in for a treat!
I’ve always loved green beans! This recipe is essentially the way mom always prepared them for Easter, served alongside a perfectly roasted leg of lamb they now grace my family’s Easter table as well.
Today I enjoy green beans just as much raw, as a delightful snack to nibble on or tossed in a salad, as I do cooked just right and tossed in a smudge of fresh raw butter and a ton of garlic!
Green beans are a fabulously healthy food rich in antioxidants and manganese, as well as B vitamins and carotenoids and flavenoids. They are also a wonderful source of dietary fiber.
I always buy my green beans fresh but if they are not available fresh in your area, flash frozen green beans make a perfect substitute.
This recipe is a family favorite and our go-to green vegetable on special occasions such as Christmas and Easter. It is a dish that compliments any meat beautifully and can just as easily be savored as part of a vegan meal. No matter how much I make we always run out, that’s how much my family loves this recipe.
To preserve the wonderful nutrient content of your beans, I recommend steaming them and keeping them slightly crispy. This recipe is ready in minutes so I recommend cooking your beans after you’ve prepared the rest of your meal.
For this recipe you will need
3 pounds of fresh green beans, preferably organic
10 to 12 cloves of garlic
1 tablespoon raw butter
1 generous handful of fresh organic parsley
Clean and trim your green beans then steam about 5 to 10 minutes until just a little tender.
Place in a serving dish, add butter, finely minced garlic and parsley and toss until combined.
Serve hot and enoy!
Garlic Green Beans
Ingredients
- 3 pounds fresh green beans or haricots vert
- 10 to 12 cloves fresh garlic minced
- 1 tablespoon raw butter
- 1 generous handful fresh parsley chopped
Instructions
- Add 1 to 2 inches of water to a large pot and bring to a boil.
- Clean and trim green beans and place in a steamer basket over boiling water.
- Cover and steam for 5 minutes
- Remove from heat and place in serving bowl
- Add 1 tablespoon of raw butter, minced garlic and chopped parsley and toss until combined.
- Serve hot and enjoy!
I love them too! Try them with a tsp of tomato pesto drizzled over … delish!

Opps no I meant a large pot Elizabeth 🙂 Thanks for bringing it to my attention. They would probably be incredibly tender cooked in a crock pot, though… I may just have to try that.
I love them as an entree with anything, but I like them best with Italian meals for some reason. I find they compliment them well.
I can see them being a great compliment to an Italian meal Clojo. I grew up in France and learned to love them there so I think of them as part of European cuisine 🙂
We call them French Beans over here on our side of the pond and they are my fave veggie.

I make garlic green beans all the time. I serve them with fresh lemon slices to punch up the flavors. One of our favorite side dishes.

I’ve always enjoyed green beans straight from my garden! Great advice on how to enjoy them, crunchy with a little garlic (and I add bacon – cause everything’s better with bacon). 🙂
Haha Linda, I could not agree more. Bacon does make everything better 😉 In fact, when I sometimes indulge and prepare my green beans the way my French grandmother used to — smothered in onions, tomatoes and chunks of bacon… Sinfully delicious!
