Mediterranean Fish Stew

MediterraneanFishStewThis is a delicious fish stew inspired from the South of France where my parents live.  I make it with cod, which is a nice firm white fish with a delicate flavor that compliments the tomato base nicely.  You could use any other firm white fish of your choosing.

Ingredients
  • ½ tsp saffron threads
  • 2 Tbsp boiling water
  • 2 tbsp olive oil
  • 1 large onion - coarsely chopped
  • 8 cloves garlic - minced
  • 2 leeks, whites only
  • 1 bay leaf, torn into small pieces
  • 1 tbsp herbes de provence
  • 1 tsp grated pink grapefruit zest
  • 1 cup dry white wine
  • 1 roasted red pepper
  • 1 lb organic vine tomatoes
  • 4 oz organic crushed tomatoes
  • 3 tbsp organic tomato paste
  • 3 cups vegetable stock
  • 1 lb cod, cut into bite size pieces
  • fresh tarragon
  • Freshly ground salt and pepper to taste
Instructions
  1. Place the saffron threads and 2 Tbsp boiling water in a small dish and let stand for about 10 minutes.
  2. Heat a large stock pot. Add olive oil. Slice leeks. When oil is hot add onions, garlic, leeks, bay leaf and herbes de Provence.
  3. Cover and cook for about 10 minutes, stirring occasionally.
  4. Cube roasted pepper and the tomatoes.
  5. When onion and leeks are soft, add cubed pepper and tomatoes. Add the white wine and grapefruit zest and cook covered for another 10 minutes.
  6. Add the crushed tomatoes, tomato paste, vegetable stock and saffron (with the soaking water). Bring to a boil. Reduce heat and simmer uncovered for 15 minutes.
  7. Add the cod and simmer until fish is cooked through (about 8 minutes). Season with fresh tarragon, freshly ground salt and pepper.
  8. Serve hot with a sprinkle of fresh tarragon.
