Have you been looking for a tasty healthy salad your kids will love?

This rice salad with tuna is a family favorite and one that my daughters asked me to make for their  back to school lunch.  I realized it had been a really long time since I had made this staple food that just about every French child enjoys on a regular basis. It’s super easy to make and even tastier as left overs the next day.

The traditional rice salad with tuna is made with white rice and we decided to use an organic white basmati rice though I personally favor whole grain brown rice and wild rice.  Choose whichever rice you prefer and have fun with your choice of vegetables. The variations on this salad are truly limitless.

Tuna is a must, and you’ll often find a hard boiled egg in a typical French rice salad as well. My 7 year old is not  particularly fond of eggs so I kept them out but I have included then in the recipe to keep it close to the traditional Parisian Rice Salad.

Most kids love tuna as it is not too fishy. Us moms love that it is also an excellent source of omegas.  Because of the concern with mercury I only use Safe Catch Elite Wild Tuna tuna. It goes through rigorous 3rd party testing to insure the lowest mercury levels possible.

Kalamata olives round out the flavor profile of this scrumptious salad.  Make sure to drizzle a generous amount of a delicious olive oil on your salad before tossing it to combine all your flavors.  Salt and pepper to taste and you have a scrumptious salad that makes a fabulous meal that is just as enjoyable at home or on the go.

This salad is beautifully balanced in terms of macros and makes for a wonderful picnic meal. Chill overnight or at least for a couple of hours for a delicious and wonderfully satisfying meal.

Parisian Rice Salad

A staple food of most French children this delicious rice salad makes a delightful and complete meal that is simple to make and wonderfully healthy.

Ingredients

  • 2 cups cooked rice cooled
  • 10 oz canned tuna
  • 4 hard boiled eggs
  • 1.5 cup cherry tomatoes
  • 1 cup organic cucumber
  • 15 oz organic corn kernels
  • 3/4 cup pitted kalamata olives
  • 1 avocado cubed
  • 3 tbsp extra virgin olive oil
  • fresh ground salt and pepper to taste

Instructions

  • Place cooled rice and corn kernels in a salad bowl.
  • Slice or cube veggies and hard boiled eggs as desired and add to bowl.
  • Flake tuna and add to all ingredients.
  • Drizzle with a generous amount of olive oil.
  • Add fresh ground salt and pepper to taste.
  • Toss and chill before serving.
  • Add a garnish of fresh parsley when serving.
  • Enjoy!

    • I came up with this salad at my oldest daughter’s urging. It’s funny I used to enjoy rice salads as kid. I grew up n France where they are pretty popular. By somehow I’d never really prepared them for my family… Until my oldest came back from a friend’s and told me how much she’d enjoyed the one her mom’s friend had prepared. 🙂
