Persimmon and Pomegranate Salad

The persimmon is a delicious seasonal fruit rich in health promoting nutrients such as vitamins, minerals, and anti-oxidants that are vital for optimum health. This delicate winter fruit salad uses the fuyu variety of persimmons, which are firm, crisp and sweet.

This wonderful salad is equally delightful at the end of a filling meal as it is served alongside your favorite omelet for breakfast.

My girls all love it and I’m sure you will too!

Serves 6

Ingredients:

  • 4 fuyu persimmons
  • 1 cup pomegranate seeds
  • 1 organic anjou pear
  • 1 organic gala apple
  • juice of 1 lime (about 1 tbsp)
  • 1/4 cup slivered almonds
  • 12 leaves fresh mint torn or thinly sliced

Peel and cube persimmons. Core and cube apples and pears.
Combine all fruit in a salad bowl. Drizzle with lime juice and toss.

Sprinkle with slivered almonds and fresh mint leaves before serving.
