Roasted Vegetables and Sausage Frittata

When it comes to breakfast I love anything with eggs and lots of fresh seasonal vegetables.  A hearty, healthy breakfast will set you up for a success no matter what day it.  This is a simple and delicious recipe that’s perfect on a lazy morning and just as nice for a beautiful Sunday brunch with your family or girlfriends. It’s also fabulous as a light dinner served with a kale or arugula salad.

I select organic ingredients as much as possible for a power breakfast that’s a good for my family as it is scrumptious.

Roasted Vegetables and Sausage Frittata

A simple delicious meal that is loaded with healthy nutrient. Choose your favorite seasonal vegetables for the best tasting fritata each and every time. Serve hot or cold with a side salad.

Ingredients

  • 8 egg whites plus 2 whole eggs
  • 1 TBS water
  • 2 turkey sausage patties or links cooked and crumbled
  • 1 c. mixed roasted vegetables red peppers, asparagus, mushrooms, onions…
  • Celtic salt and pepper to taste
  • Spray oil‐ I like EVOO in a Misto

Instructions

  • Preheat oven to 400F.
  • Coat a Brownie pan (8x8 or 9x9) with Olive Oil.
  • Beat eggs and water until well mixed.
  • Add vegetables and sausage.
  • Season with salt and pepper, if desired.
  • Pour into pan.
  • Bake 20 minutes or until eggs are cooked.
  • Turn broiler on to add a little color! ( You can also do that to reheat a serving)
  • Let it sit for 5 minutes and cut into 8 triangles.
  • One serving is 2 triangles.

    • Breakfast is probably the most skipped meal of all, especially for busy moms… but it’s truly the most important meal of the day for you and your little ones… This frittata gives you clean energy that helps you mom, get everything done, and your kids be their best in school.     I rarely eat breakfast…living alone..but this wonderful dish (though it takes about 25 minutes) could be frozen and eaten over some days…a definite winner..thank you

    • Absolutely Ronald! My sister travels a lot and often prepares this ahead of time and wraps it in individual servings she can take along with her so she knows she always has a healthy breakfast. It also makes a fabulous lunch or light dinner 🙂

    Looks so good and easy to make. I like my eggs for breakfast and this would make them tastier!

    • This is a great breakfast recipe Jodi, and if you are pressed for time you can prepare it ahead of time, cut it into single servings and freeze those individually so you can warm up just what you need, when you need it. I always prefer my eggs freshly cooked but this is second best when time is tight.
