This is a clean and lean tuna salad that is simply delicious!  Eat all you want without feeling guilty.  Loaded with lean protein and tons of vitamin rich veggies, it makes for a deliciously satisfying meal.  No mayonnaise or dairy of any kind.

This is the kind of salad you can make ahead of time and keep in the fridge for a satisfying protein rich treat when you need a little pick me up.

Delicious on it’s own you can also serve it on a bed of mixed baby greens or fresh baby spinach.

It’s also fabulous stuffed into a whole grain pita pocket or if you really want to indulge on a piece of sprouted grain toast.  Yum!

My daughters love it in their lunch boxes too 🙂

A clean and lean tuna salad that is simply delicious! Eat all you want without feeling guilty. Loaded with lean protein and tons of vitamin rich veggies, it makes for a deliciously satisfying meal.
Recipe type: Salad
Serves: 6
  • 8 oz canned tuna in water, drained
  • 2 hard boiled organic eggs
  • 2 branches organic celery
  • 2 scallions
  • 1 organic bell pepper - color of your choice
  • 1 avocado
  • 1 large organic tomato or 1 cup organic pearl tomatoes
  • organic fresh basil - finely chopped
  • organic fresh parsley- - finely chopped
  • balsamic vinaigrette (recipe below)
  • 1 teaspoon garlic powder
  • fresh ground salt and pepper to taste
For the Vinaigrette (Yields ¾ cup)
  • 1 Tbsp Dijon Mustard
  • ¼ cup balsamic vinegar
  • ¼ cup balsamic vinegar
  • ½ cup virgin olive oil
Making the vinaigrette:
  1. Place all ingredients in a glass jar and shake until smoothly blended.
Making the salad
  1. Chop all the vegetables and herbs and place in a large salad bowl.
  2. Chop hard boiled eggs and add to veggies.
  3. Flake tuna into bowl.
  4. Drizzle with balsamic vinaigrette and garlic powder and toss until thoroughly blended.
  5. For even more flavor, refrigerate for 30 minutes before serving.

    • Thanks Denise 🙂 I’m quite fond of tuna as well… so tasty and so good for you! I just make sure I use brands that are known for being low in mercury so I don’t have to worry about over indulging.
