If you love tuna salad but don’t want the mayo you are going to love this is a clean and lean option.

Bursting with nutrients this easy to make tuna salad  is simply delicious!  Eat all you want without feeling guilty.  Loaded with lean protein and tons of vitamin rich veggies, it makes for a deliciously satisfying meal that’s perfect at home or as a picnic meal.

This is the kind of salad you can make ahead of time and keep in the fridge for a satisfying protein rich treat when you need a little pick me up.

Delicious on it’s own you can also serve it on a bed of mixed baby greens or fresh baby spinach.  Top with fresh sprouts for extra fun and flavor.

What’s in this dairy free Tuna Salad

Here is what you will need to make this salad:

  • canned or fresh tuna
  • hard boiled eggs
  • tomatoes
  • cucumbers
  • bell peppers – I use red and yellow
  • scallions
  • celery
  • fresh herbs — basil and parsley
  • balsamic vinaigrette

Not a huge fan of canned tuna? No problem! Try it fresh grilled tuna or salmon or some grilled chicken tenderloins.

It’s also fabulous stuffed into a whole grain pita pocket or if you really want to indulge on a piece of sprouted grain toast.  Yum!

My daughters love it in their lunch boxes too 🙂

Scrumptious Tuna Salad

Ingredients

  • 8 oz canned tuna in water drained
  • 4 hard boiled organic eggs
  • 2 branches organic celery
  • 2 scallions
  • 1 organic bell pepper - color of your choice
  • 1 avocado
  • 1 cup organic pearl tomatoes
  • 2 tbsp organic fresh basil - finely chopped
  • 1 tbsp. organic fresh parsley- - finely chopped
  • 1 teaspoon garlic powder
  • fresh ground salt and pepper to taste

For the Vinaigrette (Yields 3/4 cup)

  • 1 Tbsp Dijon Mustard
  • 1/4 cup balsamic vinegar
  • 1/4 cup balsamic vinegar
  • 1/2 cup virgin olive oil

Instructions

Making the vinaigrette:

  • Place all ingredients in a glass jar and shake until smoothly blended.

Making the salad

  • Chop all the vegetables and herbs and place in a large salad bowl.
  • Chop hard boiled eggs and add to veggies.
  • Flake tuna into bowl.
  • Drizzle with balsamic vinaigrette and garlic powder and toss until thoroughly blended.
  • For even more flavor, refrigerate for 30 minutes before serving.

    I absolutely love Tuna Salad, and this recipe looks great. I am trying to incorporate more fish into my diet because of the health benefits, but for the most part I don’t really care for a lot of fish. But you can never go wrong with tuna! 🙂

    • Thanks Denise 🙂 I’m quite fond of tuna as well… so tasty and so good for you! I just make sure I use brands that are known for being low in mercury so I don’t have to worry about over indulging.
