Simple Vegan Lentil Soup

I love family meals and insist on them every night…

But when I come in from a workout on a cold winter day I love to cuddle up on the couch with a nice bowl of steaming soup… So comforting!

On those days I want a soup that is full of flavor but doesn’t need to simmer for hours before it can be enjoyed.

This lentil soup is perfect!

It’s rich in flavor and hearty without being heavy… And it’s made from scratch and still ready in less than half an hour. How awesome is that!

If you’d like a little extra green nutrition you can add a couple of handfuls of fresh baby spinach just before serving and allow them to “wilt” so they are soft but retain all their freshness.

Simple Vegan Lentil Soup

Ingredients

  • 2 tbsp olive oil
  • 1 small onion coarsely chopped
  • 4 cloves garlic minced
  • 2 large potatoes
  • 2 large parsnips
  • 3 large zucchinis
  • 1 cup uncooked lentils
  • 4 cups vegetable broth
  • fresh ground salt and pepper to taste

Instructions

  • Heat olive oil on high heat in a large saucepan or medium crockpot.
  • Add chopped onion and minced garlic and sauté for a minute or two until onions are translucent.

    I love lentil soup–adding parsnips to it would be unique! 🙂

    • I am a huge lentil fan Christina and my girls enjoy them as much as I do. The parsnips add a little sweet something to this recipe. Adding them was one of those kitchen experiments that proved to be quite delicious 🙂 Enjoy!
