Spinach and Red Cabbage Salad


Spinach and red cabbage are two of my favorite superfoods.  A hint of curry in the dressing gives it a sultry flavor that’s tantalizing.

This is a simple salad that can be served as is for a tasty appetizer, or you can add some grilled organic free range chicken for a complete meal.

Serves 4

Preparation: 10 Minutes


  • 1 head fresh organic baby spinach, washed and dried
  • 1/2 small red cabbage
  • 1 avocado
  • 2 baby cucumbers
  • 1/4 cup pumpkin seeds
  • 2 tbsp chia seeds
  • curry vinaigrette

For the vinaigrette: (yields about 1 cup)

  • 1 tbsp tbsp whole grain mustard
  • 1/4 cup red wine vinegar
  • 1/2 cup organic extra virgin olive oil
  • 1 tsp curry powder
  • fresh ground salt and pepper to taste

Making the salad:

Place baby spinach in a salad bowl.

Finely slice red cabbage and cucumber and toss into bowl.  Cut avocado into cubes and add to the remaining ingredients.

Sprinkle with pumpkin and chia seeds.

Drizzle with dressing, toss and serve.
