Spinach with Warm Lentils Salad


This is a simple and delicious salad that my mom first came up with while she was visiting a few years ago.

A simple and delicious salad combining iron rich spinach with warm lentils and pine uts tossed in a tangy vinaigrette.

  • 4 generous handfuls organic baby spinach - stemmed, washed and dried
  • 2 tsp coconut oil
  • 1 shallot, minced
  • 1 cup cooked lentils
  • ¼ cup pine nuts
  • Dijon vinaigrette
  1. Heat a small frying pan.  Add coconut oil and melt.Add shallots and sauté 2 minutes until soft.  Add lentils and warm gently.
  2. Divide spinach onto two plates.  Place half of the lentils and shallots on each plate.
  3. Toast the pine nuts in the pan, sauteing occasionally so they don't burn.
  4. Sprinkle roasted nuts on salad.
  5. Place a few tablespoons of the dressing in the pan and warm up.  Drizzle on salad.

One of the world’s healthiest vegetables, spinach is easy to prepare, especially in this tasty salad. Make sure to choose vibrant green leaves to benefit fully from this nutrient dense superfood.  Warm lentils add a healthy dose of protein while pine nuts, also rich in protein and other nutrients keeps you satisfied longer by acting as an appetite suppressant!




For the dressing: (makes 3/4 cup)

  • 1 tbsp gluten free Dijon mustard
  • 1/4 cup organic apple cider vinegar
  • 1/2 cup olive oil
  • fresh ground salt and pepper to taste

Place all ingredients in a mixing jar and shake until combine.  For a creamier dressing mix in a small blender.
