Black Kale Quinoa Salad

Ingredients

  • 2 cups cooked quinoa
  • 3 cups black kale leaves torn in bite size pieces
  • 2 small organic apples
  • 2 avocados
  • 1/2 cup organic red grapes
  • 1/2 cup organic pomegranate seeds
  • 1/4 cup pumpkin seeds
  • 2 tbsp chopped fresh organic basil
  • 1/4 cup grapefruit basil vinaigrette

Instructions

  • Place the cold quinoa in a large salad bowl.
  • Core and cube apples.
  • Peel and cube avocados.
  • Cut grapes in half.
  • Add all of the ingredients to quinoa in salad bowl.
  • Sprinkle pumpkin seeds onto salad along with chopped basil leaves.
  • Drizzle grapefruit basil dressing and toss.
  • Chill before serving to blend all the flavors.
