Chicken and Fig Salad

There’s something about fig that is simply irresistible!  Biting in to a fig that is just perfect is a truly delicious experience.  If you enjoy figs as much as I do you are going to love this simple yet tasty salad.  A hint of fresh ginger brings out the full flavor of the figs.

serves 4

Preparation: 15 minutes

Ingredients:

  • 6 oz mixed baby greens
  • 1/2 bulb fennel
  • 2 tbsp extra virgin olive oil
  • 2 chicken breasts
  • 12 figs
  • 2 tbsp chia seeds
  • fresh grated ginger
  • apple cider vinaigrette

For the vinaigrette:

  • 1 tbsp Dijon mustard
  • 1/2 cup apple cider vinegar
  • 1 cup extra virgin olive oil
  • fresh ground salt and pepper to taste

Making the vinaigrette:

combine all ingredients in a glass jar and shake until blended.  For a creamier dressing place ingredients in a small blender and blend for a few seconds.

Making the salad:

Finely slice fennel.

In a salad bowl toss baby greens and fennel with desired amount of the vinaigrette.   Divide salad onto four plates.

Heat a small skillet.  Add olive oil. When oil is hot add chicken. Brown on both side to lock in moisture.  Reduce heat and cook until fully cooked but still moist.  You may add the chia seeds to the chicken so they are lightly roasted.

Slice cooked chicken and arrange on greens.

Slice figs in half and arrange with chicken.

Sprinkle salad with chia seeds and fresh grated ginger.

Salt and pepper to taste.

*optional: Sear the figs before adding to salad to bring out the full flavor.
