Chicken with Papaya and Zucchini

As I was looking through my fridge yesterday wondering what to make for lunch, I thought “what could I combine in a new way today?”  And this is what I came up with.  The papaya is a wonderful compliment to the zucchini, adding a little sweetness my daughters just loves.  It’s perfect for a light summer lunch.

Serves 4

Preparation: 10 minutes

Cooking time: 20 to 30 minutes

Ingredients:

  • 1 tbsp coconut oil
  • 1 medium sweet onion, chopped
  • 8 to 12 organic chicken tenderloins
  • 4 medium zucchinis
  • 1/2 almost ripe papaya
  • 1/2 cup organic chicken broth
  • salt and pepper to taste
  • optional 1 to 2 tbsp chia seeds or sesame seeds for garnish

Directions

Heat coconut oil in a large skillet and add onion.  Sauté on medium until translucent.

Add chicken tenderloins and brown on both sides.

cube zucchinis and papaya.  Add to chicken.  Sauté about 2 minutes.

Add chicken broth, salt and pepper.  Reduce heat, cover and simmer until chicken is fully cooked and vegetables tender.

Serve hot and sprinkle with chia or sesame seeds if desired.
