These scrumptious coconut cherry bars are filled with fruits and nuts rich in antioxidants and vitamins that will give you clean, healthy energy. My daughters love these as a snack, I love to keep one in my purse for a quick fix whenever I need one, and my hubby loves them before his 50 mile bike rides. I’m sure you will love them too!
Ingredients:
- 1 cup cashews
- 1 cup pitted Medjool Dates
- 1 Cup dried Bing Cherrie
- 1 Cup dried unsulfured Apricots
- 1 Cup dried Organic Turkish Mulberries
- 1/2 Cup shredded coconut
- 1/2 Cup Cacao Nibs*
* Replace with dark chocolate chips or chunks if desired
To make the bars:
Place all the ingredients in bowl of food processor. Begin by pulsing ingredients until coarse chunks. Continue blending until a sticky paste is formed.
Place the paste on a piece of parchment paper and spread into a 1/4 thick rectangle.
Wrap in paper and freeze until firm.
Cut into bars or squares of your liking and enjoy!
