Curried Chicken and Strawberry Salad

Ingredients
For the dressing: (yields about 1 cup dressing)
- 1 tbsp Dijon mustard
- 1 tbsp fresh squeeze orange juice
- 3 tbsp apple cider vinegar
- 1/2 cup organic virgin olive oil
For the Salad
- 2 chicken breasts cut into strips -- I use pasture raised
- 2 tsp curry
- 1 tbsp olive oil
- 6 oz baby power greens kale, spinach and red chard
- 4 endives -sliced
- 1 cup sliced fresh organic strawberries
- optional: slivered almonds pepitas or chia seeds for sprinkling
Instructions
Making the dressing:
- Place all ingredients in a glass jar and shake until well blended.
- For a creamier dressing, use a small blender such as a Magic bullet or Nutribullet and blend for 10 seconds.
Preparing the chicken
- Heat a medium skillet. Add curry and heat to release flavor. Add olive oil.
- When oil is hot add chicken. Brown on all sides, infusing with the curry. Reduce heat and cook until tender.
Assembling the salad:
- In a salad bowl, combine baby greens, curried chicken, sliced endives and sliced strawberries. Drizzle with dressing and toss until combined.
- Sprinkle with sliced almonds, pepitas or chia seeds if desired.
- Serve and enjoy!

Oooh I would’ve never considered mixing curry and strawberries!! What a fun combo!! I think we’ll have to try this for next summer when we pick fresh ones!!
