I walked into the house with a basket full of freshly picked lemons.
My hubby said with a twinkle in his eye:
‘Making some lemon curd?”
Oh how could I resist that sweet smile??
My challenge?
Coming up with a recipe that would meet my desire for healthy eats without compromising on taste 🙂
Judging from the empty jars I found the next day, I’d say I had succeeded.
How to Make Healthy Lemon Curd
Traditionally, lemon curd is made with white sugar (tons of it), egg yolks and lots of butter.
I decided to use to whole egg to get both the creamy texture and a little added protein.
I replaced the white sugar with some local raw honey. I chose an orange blossom honey as I thought it would complement the lemon nicely.
Local honey has so many health benefits I love using it as a natural sweetener as often as I can. One of the many benefits is a boost of your immune system against seasonal allergies.
I used organic raw butter from a local farm for that rich creamy taste that is oh so scrumptious!
Add some fresh squeezed lemon juice, a generous doze of lemon zest and you’ve got yourself a sinfully delicious, healthy lemon curd 🙂
Healthy Lemon Curd Recipe
The secret to a smooth, creamy lemon curd is in the preparation.
Take your time and you’ll discover this is a simple process with fabulous results.
Gather your ingredients and supplies
You will need raw unsalted butter, raw honey, 6 eggs, fresh squeezed lemon juice and about 3 tablespoons of lemon zest.
You will also need one mixing bowl with handheld mixer, a non-reactive saucepan for cooking your mixture, a wooden or silicone spatula for mixing and a few glass jars for storing.
Easy Healthy Lemon Curd
Ingredients
- 1/2 Cup raw unsalted butter
- 2/3 Cup raw Honey local is best
- 6 eggs
- 1 1/2 Cups lemon juice
- 3 tbsp lemon zest
Instructions
- Place butter and honey in a mixing bowl.
- Using a mixer cream butter and honey mixture until fluffy.
- Continue beating and add eggs one by one, mixing completely in between.
- Add lemon juice and zest beating until all ingredients are combined. Your mixture may appear curdled at this point. Don't worry it's perfectly normal and it will become smooth when you cook it.
- Pour the mixture into a medium non- reactive saucepan.
- Heat over medium heat, stirring constantly.
- Continue cooking until mixture thickens and begins to pull from the edges of the saucepan.
- Increase heat stirring constantly and continue cooking until mixture begins to bubble lightly, just before reaching the boiling point. Cook another 20 to 30 seconds and remove from heat.
- Allow to cool before pouring into glass jars.
- Enjoy!
I’ve never had lemon curd. I’ve heard of it, but never knew it was this easy to make. I like new taste experiences, so it sounds like something I should try…
