- Raw Cashews or Cashew Butter
- Medjool dates
- Coconut oil
- Unflavored whey protein or vanilla vegan protein powder
- Organic Matcha green tea powder
I use home made cashew butter for the matcha protein balls. Cashews have a subtle flavor that is neutral when combined with the other ingredients in this recipe.
I prefer to make my own cashew butter, rather than use the store bought variety as too many nut butters are made with added oil to make then extra creamy. Making your own ensures freshness as well so you can reap the most heath benefits from your cashew butter.
One cup of raw cashews yields one cup of cashew so there’s no math to worry about.
To make your cashew butter simply place whole cashew or cashew pieces in the bowl of your food processor and blend until you obtain a thick paste.
Easy Healthy Matcha Protein Balls
Ingredients
- 1 cup raw cashew butter
- 1 cup pitted mejdool dates
- 1 tbsp coconut oil
- 3 servings unflavored whey protein
- 1/3 cup Matcha green tea powder
- raw cacao and shredded coconut for rolling *optional
Instructions
- Soak dates in 1 to 2 tablespoons of hot water to soften.Place dates with their water and cashew butter in the bowl of a food processor and blend until creamy. Add coconut oil, unflavored whey protein and matcha powder and blend until a thick paste is obtained, scraping the sides of the bowl as needed. Place paste on a clean cutting board or bowl. Roll into 1/2 inch balls. Roll balls into shredded coconut or raw cacao powder if desired. Place Matcha protein balls in a glass container and refrigerate until ready to enjoy.
