There isn’t a season that isn’t right for baking but fall and baking seem practically synonymous. There’s something about delicious smells that fill my home when I walk in from a crips autumn day that is nothing short of magical. It brings instant comfort and has an uncanny way of dissipating any greys that may be lingering….
I grew up baking with mom and both of my grandmas and baking fills me with the most delicious sense of home… comfort… love… joy!
I love to bake all sorts of things from decadent cakes to scrumptious holiday cookies and more recently, all sorts of healthy snacks and vegan creations.
Most of the time I bake from scratch. That’s the way I learned and I love being able to carefully select my ingredients. But as a busy mom I am happy when I can save a little time. That’s why I was excited to be invited to review a couple of baking mixes from FitBodyBakery through my SweatPink community.
The story behind Fit Body Bakery is one I love! Samara Donald, a mom, sister, wife, and athlete with a full time office job, is passionate about helping people get back in the kitchen and making their own food. She volunteers with a community program teaching nutritional cooking. As a fitness competitor and coach, she wanted a way to put more nutrition into her yummy baked treats, so through many years of creative recipe crafting and taste testing, she developed the Fit Body Bakery line to support a strong, healthy, active body. Samara is so happy to be able to share these recipes with you in the form of convenient baking mixes. Now we can all #BakeFit! I was inspired to make an autumn version of the motivator muffins using my homemade spiced pumpkin butter and glazed maple ginger pecans. If you don’t have any spiced pumpkin butter on hand you can use a simple pumpkin purée and add a generous amount of ginger and cinnamon for bold flavor.
How to make Maple Ginger Glazed Pecans:
Heat a medium skillet, preferably an iron skillet, over medium high heat. Add two tablespoons of maple syrup. As soon as maple syrup bubbles add 1 cup pecans, a generous sprinkle of cinnamon and about tablespoon of fresh grated ginger. Toss pecans in syrup and spices until well coated and slightly brown. Remove from heat and set aside. Here’s my scrumptious spiced pumpkin motivator muffin recipe.
Making the Spiced Pumpkin Motivator Muffins
Assemble your ingredients and preheat oven to 350. Here’s what you will need: 1 1/2 cup spiced pumpkin butter 1 cup almond milk (or milk of choice) 4 egg whites (1/3 cup liquid egg whites) 1 cup maple ginger glazed pecans (divided 2/3 + 1/3) 1 box Fit Body Bakery Motivator Muffin Mix 1 inch fresh ginger, grated 1/2 tbsp cinnamon (optional) Coconut oil for muffin tins Pour almond milk into mixing bowl Add spiced pumpkin butter or pumpkin purée and egg whites. Mix well. Pour Motivator Muffin Mix into bowl and mix until combined. It’s okay if you have a few lumps. Add glazed pecans, fresh grated ginger and additional cinnamon if desired and combine. Grease muffin tins with coconut oil and spoon batter into tins. Add a few glazed pecans to each tin. Place in the oven and bake for 20 minutes at 350 until cooked through and muffins turn a lovely golden hue:-) Remove from oven and try to resist the temptation to gobble up a hot muffin right then and there. Allow to cool on rack for a few minutes before indulging in that first scrumptious bite! I had planned on sharing these scrumptious little morsels with my workout buddy but my family gobbled them up before I had a chance to sneak a few away. They found them to be delicious! I was able to sample one or two and am very happy with them as well.

I am thrilled that I could not taste the stevia which is the one ingredient that had made me frown when I read the list of ingredients. The list itself is short and easy to read.
So Fit Body Bakery gets two thumbs up from me 🙂
Get Ready to #BakeFit with Fit Body Bakery and Spiced Pumpkin Motivator Muffins
Ingredients
- 1 1/2 cup spiced pumpkin butter
- 1 cup almond milk or milk of choice
- 4 egg whites 1/3 cup liquid egg whites
- 1 cup maple ginger glazed pecans divided 2/3 + 1/3
- 1 box Fit Body Bakery Motivator Muffin Mix
- 1 inch fresh ginger grated
- 1/2 tbsp cinnamon optional
- Coconut oil for muffin tins
Instructions
- Assemble your ingredients and preheat oven to 350.
- Pour almond milk into mixing bowl.
- Add spiced pumpkin butter or pumpkin purée and egg whites and mix well.
- Add motivator muffin mix and mix until combined. A few lumps may form and that's perfectly fine.
- Add maple ginger glazed pecans, fresh grated ginger and additional cinnamon if using and combine.
- Grease muffin tins with coconut oil.
- Spoon batter into 15 muffin tins.
- Add remaining glazed pecans on top of batter.
- Bake at 350 for 20 minutes or until done and muffins turn a beautiful golden hue.
- Remove from oven and allow to cool for 10 minutes before indulging.

They are delicious indeed Robin but I actually preferred them the next morning after my workout when all the flavors had settled and were bursting in my mouth!

I think my husband would LOVE these!! He’s been looking for yummy, on-the-go snacks. But, he’s allergic to Stevia, so I’m not sure I’d buy them for that reason.
Oh what a shame about your hubby’s allergy to Stevia Sara! I’m not a huge fan of stevia and frankly, hate that it is the go to sweetener in most healthy food products from protein powders to baked goods…. I can pic up the taste out of 99% of them and it usually ruins it for me. That’s why I was surprised by these mixes because I could not taste the Stevia at all.
I love the story behind this line! I have a major sweet tooth so I’m excited about these!

I love the flavors of fall Ellen! The original recipe calls for apple sauce but after roasting a pumpkin I could not resist turning these into pumpkin muffins. 🙂
