My husband and daughters recently fell in love with a lemon cilantro hummus from a local grocery store. It was pretty tasty indeed but when I looked at the ingredients I wasn’t too happy with what I saw. So I decided to come up with my own recipe for this healthy and delicious snack. My recipe received a resounding “yes” from my family, so here it is for you to enjoy as well. Let me know what you think!
Ingredients:
- 16 oz freshly sprouted or cooked chick peas
- 2 tbsp raw sesame paste (tahini)
- 1/4 cup hemp seeds (optional)
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp sea salt
- 1/2 cup fresh squeezed lemon juice *
- 1/2 cup cilantro, finely minced
Place all the ingredients in the bowl of a food processor. Pulse for a minute, then blend until desired consistency.
I like my hummus on the thicker side, but if you prefer it silky smooth you can add 1 to 2 additional tablespoons of olive oil.
Enjoy as is, or with fresh vegetables.
For a complete meal, spread a layer of hummus on a kale leaf, add a handful of thinly sliced or shredded vegetables, sprinkle with dulce or chia seeds, roll up and savor!
* For a more pronounced lemon flavor, add 1 tbsp fresh grated lemon zest
