I came up with this recipe thinking of a wonderful potato cake my French grandmother used to make for my siblings and I when we were little. It was one those comfort foods that always tasted just right. I chose to use Buckwheat for the crust because the nutty flavor complements the sweeter flavor of the leeks quite nicely, and it is gluten free!
Potato Leek Quiche in Buckwheat Crust
Ingredients
For the Crust
- 11/4 cup buckwheat flour
- 1 tbsp chia seeds
- 1/3 cup butter cut into pieces
- 1/4 tsp salt
- 3-4 tbsp cold water
For the Filling
- 2 large cooked potatoes cubed (about 2 cups)
- 2 tbsp vegetable broth
- 4 large leeks whites only
- 1 cup baby swiss
- 5 eggs
- 4 oz cup crême fraîche
- 8 oz milk
- 1 tbsp fresh sage finely sliced
- fresh ground celtic salt and pepper to taste
Instructions
Making the crust:
- In a mixing bowl stir together flour, chia seeds and salt. Cut in butter until the pieces are the size of small peas. Sprinkle 1 tablespoon of water over part of the mixture and gently toss with a fork. Continue until all is moistened. Form dough into a ball.
- To make the crust in a blender: place flour, chia seeds, salt and butter in the bowl of your blender. Pulse until coarse meal is formed. Add water 1 tablespoon at the time while blending continuously until dough forms a ball.
- Making the quiche:
- Preheat oven to 400˚F.
- Roll out crust and place in pie plate. Add cubed potatoes
- In a large skillet bring vegetable broth to a boil. Reduce to a simmer. Slice leeks and add to broth. Cook until tender.
- Add to potatoes. Sprinkle with cheese.
- In a mixing bowl combine eggs, crême fraîche, milk, sage and salt and pepper. Whisk until well blended.
- Pour over veggies and cheese.
- Bake for 30 to 35 minutes or until set.
- Cool for 10 minutes before serving.
