Prosciutto and Mushrrom Quiche in Sweet Potatoe Crust

Prosciutto is one of those delicacies that is best when it is super thin… except in this recipe! Use thicker slices than what you would normally choose for a little more flavor and body. If you wish, you can replace the prosciutto with bacon or ham.

The secret to the rich, sweet flavor of this quiche is in the caramelized onions.

Prosciutto and Mushrrom Quiche in Sweet Potatoe Crust

Ingredients

For the Crust:

  • 2 cups cooked sweet potatoes
  • 2 tbsp chia seeds
  • 1 egg
  • dash cinnamon
  • 2 tbsp butter melted and separated

For the Quiche:

  • 8 to 10 slices prosciutto as thick as you can find them
  • 1 medium sweet onion
  • 6 oz mushrooms sliced
  • 1/2 cup grated cheddar cheese
  • 5 eggs
  • 4 oz crême fraîche
  • 8 oz milk
  • 1 tsp nutmeg
  • 1 tsp fresh sage
  • fresh ground salt and pepper to taste10

Instructions

MAking the Crust:

  • Preheat oven to 400˚F.
  • In a medium bowl mash sweet potatoes. Whisk in egg and combine. Add chia seeds, cinnamon and 1 tbsp melted butter and blend well.
  • Brush the remaining butter onto the bottom and sides of your pie pan.
  • Press sweet potatoes along bottom and up the sides of your pan.
  • If you'd like a little crunch with this crust, place in the oven for 15 minutes or so while you prepare the other ingredients.

Making the Quiche:

  • Heat a large skillet. Place prosciutto slices in a single layer (you'll need to do this batches) and brown slightly on each side. Remove from heat and place on a paper towel to absorb excess fat.
  • Cut or tear prosciutto in pieces and arrange on bottom of crust.
  • Sauté onions until they are caramelized. Add to prosciutto.Sauté sliced mushrooms just until tender. Add to pie pan. Sprinkle with cheddar cheese.
  • In a mixing bowl, beat eggs. Add crême fraîche, milk, nutmeg, sage, salt and pepper. Pour over mushroom, onions and prosciutto.
  • Bake for 25 to 30 minutes or until set.
  • Cool for 10 minutes and serve with a kale salad or simple green salad.

Notes

If you cannot find crême fraiche you can use regular sour cream and your quiche will be just as wonderful.

    Sorry but what is 4 crême fraîche? I am assuming it is Cream of some sort? Thanks

    • Hi Theresa, Yes crême fraîche is essentially a French sour cream which you can find at wholefoods or Trader Joe’s and a number of grocery stores. You can use regular sour cream or even heavy cream if you prefer. Enjoy!
