I love family meals and insist on them every night…
But when I come in from a workout on a cold winter day I love to cuddle up on the couch with a nice bowl of steaming soup… So comforting!
On those days I want a soup that is full of flavor but doesn’t need to simmer for hours before it can be enjoyed.
This lentil soup is perfect!
It’s rich in flavor and hearty without being heavy… And it’s made from scratch and still ready in less than half an hour. How awesome is that!
If you’d like a little extra green nutrition you can add a couple of handfuls of fresh baby spinach just before serving and allow them to “wilt” so they are soft but retain all their freshness.
Enjoy!

I wish to be Vegan
A lot of people enjoy the vegan lifestyle Catherine. What makes you wish to eat that way I am curious?

I am not a bog fan of lentiles but this recipe sounds good..
This sounds good and filling. I love having lentils for the extra protein.
Lentils are one of my favorite source of vegetable protein Katie.. They are sooo yummy!
I love lentil soup–adding parsnips to it would be unique! 🙂
I am a huge lentil fan Christina and my girls enjoy them as much as I do. The parsnips add a little sweet something to this recipe. Adding them was one of those kitchen experiments that proved to be quite delicious 🙂 Enjoy!
