Smoked Salmon Scramble

Stop by our house any Sunday morning and you’ll likely be treated to one of our favorite family meals: Brunch!  This is a treasured time for our family and we always make a big meal with an omelette or scramble eggs, sautéd potatoes or yams, fresh fruit salad, hot cocoa … the works!

This scramble is one of our favorites.

Serves 4
Preparation: 10 minutes
Cooking: 15-20 minutes

Ingredients:

  • 2 tbsp extra virgin olive oil
  • 6-8 cloves garlic, minced
  • 2 medium organic zucchinis
  • 6 oz smoked salmon (wild Alaskan)
  • 3-4 oz crumbled goat cheese
  • 8 organic eggs
  • 1 tsp turmeric
  • 1 tbsp fresh sage, finely chopped
  • fresh ground salt and pepper to taste

In a large skillet heat olive oil   Cube zucchini and add to skillet.  Sauté a few minutes until zucchini begins to soften.  Add minced garlic and sauté another minute or two until zucchini is tender.

Cut salmon into chunks and toss in skillet.  Heat through

Whisk eggs until frothy.  Add herbs, salt and pepper.  Pour over zucchini and salmon.

Reduce heat. Add crumbled goat cheese.  Gently cook eggs to desired consistency while stirring regularly.

Serve hot along side sautéd red or sweet potatoes, a green salad or fruit salad and savor every bite!
