Turkey and Veggie Delight


This recipe was inspired by a simple dish my mom used to make for us as children  It became one of those “comfort foods” for us that we always relished. My girls love this just as much.  I often make this or a variation of it for dinner and they enjoy left-overs in their lunch box the next day.

serves 6

preparation: 10 minutes

Cooking: 20 to 30 minutes


  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 1 1/2 lbs. organic turkey
  • 1 bunch black kale
  • 2 sweet potatoes
  • 1/4 to 1/2 organic chicken broth
  • herbs of your choice (sage, marjoram, herbes de provence…)
  • Fresh ground salt and pepper to taste

In a large skillet, heat herbs to release flavor.  Add oil. When oil is hot add onion and garlic and sauté slightly.

Add ground turkey and brown.

Cube sweet potatoes and cut or tear kale into 1/2 to 1 inch pieces.  Add to skillet and sauté for about a minute.

Reduce heat, add chicken broth and cover.

Simmer for 20 minutes or until fully cooked.

Serve hot and enjoy!

Change it up!

The beauty of this recipe is in it’s simplicity and it’s versatility.
Change the herbs and vegetables to match your mood and taste.

Here are a few ideas:

Veggies: Replace kale with zucchini, spinach or asparagus, or mix them up for even more fun.  Switch the sweet potatoes to organic red potatoes or even purple potatoes.

Herbs: Sage is light and fragrant, herbes de provence add a little more flavor.  Cumin or curry add a little exotic flare.

Turkey:  replace with grass fed ground beef.
