Scrumptious Green Scramble

A simple, delicious and power packed breakfast scrambles with kale and zucchini.

  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1/2 shallot chopped
  • 6 leaves organic black kale
  • 1 large organic zucchini
  • 8 eggs
  • 1 tsp ground cumin
  • Fresh ground salt and pepper to taste


  • Heat a large skillet and add olive oil.
  • When oil is hot add garlic and shallot. Sauté 1 minute then add zucchini and sauté an additional 2 minutes.
  • Reduce heat and add kale. Cook until vegetables are tender.
  • Meanwhile beat eggs. Add cumin and salt and pepper to taste.
  • Pour over vegetables. Cook on low heat until done, stirring constantly.
  • Serve hot.


Optional: Add fresh grated manchego cheese or crumbled goat cheese.
