Scrumptious Green Scramble
A simple, delicious and power packed breakfast scrambles with kale and zucchini.
organic black kale
large organic zucchini
Fresh ground salt and pepper to taste
Heat a large skillet and add olive oil.
When oil is hot add garlic and shallot. Sauté 1 minute then add zucchini and sauté an additional 2 minutes.
Reduce heat and add kale. Cook until vegetables are tender.
Meanwhile beat eggs. Add cumin and salt and pepper to taste.
Pour over vegetables. Cook on low heat until done, stirring constantly.
Optional: Add fresh grated manchego cheese or crumbled goat cheese.
