Assemble your ingredients and preheat oven to 350.
Pour almond milk into mixing bowl.
Add spiced pumpkin butter or pumpkin purée and egg whites and mix well.
Add motivator muffin mix and mix until combined. A few lumps may form and that's perfectly fine.
Add maple ginger glazed pecans, fresh grated ginger and additional cinnamon if using and combine.
Grease muffin tins with coconut oil.
Spoon batter into 15 muffin tins.
Add remaining glazed pecans on top of batter.
Bake at 350 for 20 minutes or until done and muffins turn a beautiful golden hue.
Remove from oven and allow to cool for 10 minutes before indulging.
